As I’m sure you know already, I LOVE PIZZA. I wanted to share my favorite pizza recipe with you guys. A fun twist on normal pizza, I add sweet potato chunks with caramelized onions and rosemary sprinkled on top after baking. It is the perfect combination of flavors and has lots of veggies, bonus!
Ingredients & Directions
One medium sized sweet potato – Microwave for about 5 minutes. Let cool while you prepare the other toppings. I usually slice into round pieces but you can also remove the skin and smash it up. Either way its great!
Pizza dough – I love the garlic herb flavor from Traders. You can also use the pre-made ones because sometimes pizza dough is hard to find (still haven’t found it in London!) If you use dough make sure you leave about 30 minutes at least for it to get to room temperature before rolling out
Mozzarella cheese – Aka the best thing in all of the world. I usually use a ball and break into pieces but shredded works too!
Tomato sauce – After you’ve rolled out your dough add tomato sauce of choice, followed by cheese.
One yellow or white onion – Chop and saute in olive oil until caramelized. YUM. Sprinkle on top before baking.
Bake at 450 F for about 10-12 minutes. If using fresh pizza dough, I find sometimes cooking that a few minutes by itself first then adding the toppings helps to make it crispy all the way through! Make sure you spray the bottom with oil to prevent from sticking to the pan. (Made that mistake a few times unfortunately…)
A few hand fulls of rosemary – The most important part! Add on top of pizza once out of the oven. You can also add red chili flakes if you like spice!
